Apple Cinnamon Quinoa Breakfast Bowl

The best part of this recipe is that it’s very easily adaptable to your own needs and flavors.

You’ll Need:
1 cup uncooked quinoa
1 cup water
1/3 cup milk
2 large apples peeled, cored and chopped
2 tablespoons butter
1 tablespoon brown sugar
3/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
pecans, chopped, garnish
maple syrup, optional

In a medium saucepan, over medium heat, combine the quinoa, water and milk, sprinkle with salt, stirring occasionally and bring to a boil.

Once the mixture begins to boil, immediately reduce heat, cover and cook about 18 minutes.

Remove from heat, leave it covered. In a small saucepan, melt the butter, add apples, brown sugar, cinnamon and nutmeg, sauteing until the caramelized and softened.

Fluff the quinoa with a fork and add the caramelized apple mixture.

Transfer quinoa to serving bowls, drizzle the top generously with maple syrup, a light sprinkle of cinnamon and a couple pecans.

Serve hot and enjoy

Try fresh peach slices instead of apples or diced fresh pumpkin or winter squash pieces (about 1 cup), raisins
