Pumpkin Oatmeal Breakfast Mug Cake- a delicious way to start the day and they make great midday snacks too
{serves 1; ~200 calories without toppings}
1/3 cup old fashioned oats
1/2 tsp ground cinnamon
pinch of ground nutmeg
1/4 tsp baking powder
pinch of salt
1/3 cup vanilla almond milk
1/3 cup pumpkin puree
2 tsp brown sugar
1 egg white
1/4 tsp pure vanilla extract

In a bowl, mix everything together. Pour batter into a microwave safe mug/jar and microwave for 2 1/2 to 3 minutes. Top with Greek yogurt, dried cranberries, chopped walnuts or pecans, etc
