This is perfect to serve to your vegan house guests…and your omnivore guests won’t ever guess it’s eggless!
2 cups self-rising flour 1 tsp baking soda 1/2 cup sugar (vegans don’t use white sugar because it’s bleached white with bone char, so if it’s for vegans, seek out natural sugar) 1 cup sunflower oil 1 cup soy milk (can use almond or rice milk, too) 2 tsp vanilla extract
Oil an 8″ square pan. Heat your oven to 350*.
Combine flour, soda, and sugar. Make a well in the middle. Pour in oil, milk, and vanilla.
Mix well. Pour into prepared pan. Bake 30 minutes, or till knife inserted near center comes out clean.
