Don’t let the seemingly long list of ingredients throw you off, these Baked Lemon Donuts are a breeze to make and they’re SO DELICIOUS!
You can ketofy this recipe by using Carbquik in place of the flour and bochasweet in place of the sugar.
Baked Lemon Donuts
2 C flour
¾ C sugar
2 tsp baking powder
1 tsp kosher salt
¾ C buttermilk
2 large eggs
2 tbsp butter melted
1 tbsp freshly squeezed lemon juice
½ tsp lemon extract
2 tbsp lemon zest
1 Tbs Poppyseeds (optional)
Large disposable piping bag or Gallon Ziploc Bag
Lemon Glaze Ingredients
1 C powdered sugar
1 tbsp lemon zest
1 Tbs unsalted butter, melted
Fresh Lemon Juice
The oven should be preheated to 350 degrees, and a six-cavity donut pan should be sprayed with non-stick baking spray.
Add the flour, sugar, baking powder, and salt to a large bowl and whisk until combined.
Whisk in the buttermilk, eggs, butter, lemon juice, lemon extract, poppyseeds (if using), and lemon zest. until combined
Transfer the batter into the large piping bag and cut the tip-off or transfer it into a gallon ziploc bag and cut off one bottom corner.
Pipe the batter into the donut pan.
Bake for 9 minutes Remove from the oven and allow to cool for a few minutes before placing on a wire rack.
Repeat to finish the batter, this makes 12 large donuts.
Make the Lemon Glaze
Combine the powdered sugar, lemon zest, and unsalted butter together. Add just enough lemon juice to make a thick glaze.
Dip the slightly warm donuts into the glaze, then place them onto a wire rack.
Repeat with remaining donuts, Enjoy!
