Apricot-Cherry Cobbler
8 fresh apricots, sliced
1/3 cup sugar
2 cups pitted fresh cherries
1 tbs flour + 1 cup
1/2 cup cornmeal
1/4 tsp salt
1 1/2 tbs + 1 tsp sugar
2 tsp baking powder
1/2 tsp orange zest
5 tbs butter (or vegan margarine)
3/4 cup milk (or a non-dairy milk)
Pre-heat oven to 375 degrees.
Combine apricots and 1/3 cup sugar, Set aside. Combine cherries and 1 tbs flour. Set aside.
Combine dry ingredients. Reserve 1 tsp sugar. Stir in orange peel.
Cut in butter until mixture resembles coarse meal.
Add milk.
Stir just to moisten dry ingredients.
Combine fruit in buttered 1-1/2-quart baking dish. Spoon batter over top. Sprinkle with remaining sugar.
Bake 25 to 30 minutes or until golden brown.
Cool slightly and serve. Makes 8 servings.
