Turkey Burgers
1 tbs olive oil
1/2 cup onion, finely chopped
2 garlic cloves, minced
14-oz can diced tomatoes, undrained
1 tsp dried oregano leaves
2 tbs tomato paste
salt and ground black pepper, if desired
2 tbs fresh basil, chopped
1 lb ground turkey, shaped into four burgers
4 burger buns, split and toasted

1 cup parmesan cheese, freshly grated
Heat oil in large frying pan over medium-high heat. Add onion and garlic. Cook, stirring occasionally, for about 5 min or until onion is softened. Add tomatoes with their juice, oregano, paste, salt and pepper, if desired. Bring to a boil. Reduce to medium-low. Simmer, uncovered, stirring occasionally, for about 10 min or until thickened. Stir in basil.
Cook the patties, four min each side. Always cook to well-done, 165F as measured by a meat thermometer. Top bottom half of buns with patties, tomato mixture, parmesan cheese, and top half of buns. Makes four burgers
