Sweet and Sour Meatballs
16-oz pkg frozen fully cooked meatballs*
16-oz pkg frozen stir-fry vegetables
1/4 cup apricot jam
1/4 cup Catalina dressing
2 tbs soy sauce
3 cups hot cooked instant white rice*
Combine all ingredients except rice in large skillet. Cover.
Cook on medium-high heat 10 min or until meatballs and vegetables are heated through, stirring occasionally.

Serve over rice. Serves 4
*Ordinarily, I don't recommend frozen meatballs or instant rice, but for camping trips it's okay;-D Another method is to prepare ahead at home: Combine all ingredients except rice and place in a container. Cook rice, regular or instant, and place in another container. Keep chilled until ready to cook over a camp stove or a good hot camp fire. Then place every thing in the skillet, cover, and heat thoroughly, stirring occasionally, about 10 min.
