Vegan Chocolate Cola Brownies
2 cups all-purpose flour
2 cups white granulated sugar
3/4 cup unsweetened cocoa powder
1 tsp baking powder
1 tsp salt
1 cup cola or other dark soda (not diet)
3/4 cup canola oil
1/4 cup dairy-free sour cream
1 tsp vanilla extract
1 cup dark dairy-free chocolate chips

Preheat the oven to 350. Lightly oil an 9"x13" baking dish.
In a medium-large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, and salt. In another mixing bowl, whisk together the cola, canola oil, dairy-free sour cream and vanilla extract until well blended. Add the wet ingredients to the dry, mixing until just combined. Fold in the dairy-free chocolate chips.
Spread the batter evenly into the prepared dish and bake for 30-40 minutes, or until the top cracks slightly. Allow the brownies to cool completely in the pan before cutting into squares and serving.
