Easy Green Bean Salad- Breakfast Ideas

Here's a delicious brunch side -- Easy Green Bean Salad 2 cups frozen French cut green beans 1 tbs white vinegar 1/4 cup tomato juice 2 tsp sugar 1/4 tsp dried leaf tarragon, crumbled 1 tbs finely minced or grated onion 3 tbs chopped pimiento salt and pepper to taste

    Question Easy Green Bean Salad

    Here's a delicious brunch side --
    Easy Green Bean Salad
    2 cups frozen French cut green beans
    1 tbs white vinegar
    1/4 cup tomato juice
    2 tsp sugar
    1/4 tsp dried leaf tarragon, crumbled
    1 tbs finely minced or grated onion
    3 tbs chopped pimiento
    salt and pepper to taste

    2 hard cooked eggs, sliced
    lettuce leaves
    Cook green beans according to package directions. Drain and cool thoroughly. In a bowl, combine vinegar, tomato juice, sugar, tarragon, onion, pimiento, salt, and pepper in a bowl. Mix well. Add cooled green beans and sliced eggs. Toss lightly to blend. Chill thoroughly. Serve on lettuce leaves. Serves 4.

    I've made this one a few times, I don't usually use the tarragon, I use Cilantro instead.

    Tarragon or cilantro, depending on your preferences...it still makes a great brunch side;-D Thanks for sharing about the cilantro...I'll try it the next time I make this!
