Grilled Pork Chops with Mango Relish
1 tbs soy sauce
1 garlic clove, minced
2 boneless center-cut pork chops
1/2 mango, chopped
1 tbs finely chopped red onion
1 1/2 tsp minced, seeded and deveined jalapeno
1 1/2 tsp lime juice
2 tbs apricot preserves
Combine soy sauce and garlic in shallow baking dish. Add pork chops, turning to coat well. cover and refrigerate 30 minutes. Meanwhile, combine mango, onion, jalapeno, and lime juice in small bowl. Heat grill. Grill pork, covered, over medium heat or coals 3 to 4 minutes or until browned. Turn. Brush with half of the preserves. Grill 3 to 4 minutes or until browned. Turn. Brush with remaining preserves. Grill 1 minute or until pork is pale pink in center. Serve with mango relish. 2 servings = about 295 calories.
