Simple Apple Cinnamon Pork Loin with Sweet Potatoes and Onions

Pork Roast with Sweet Potatoes, Apples and Onions is a fall favorite in our house! It’s an impressive meal that’s ready and on the table in under an hour, but tastes like you’ve spent all day cooking.
The wonderful part of this dish is that it’s very easy to throw together. The flavors complement each other very well and this is the perfect gluten free paleo-friendly recipe for any family.

You’ll Need:
2 1/2 pound pork roast
olive oil, salt and pepper
2 Large Apples, Cored and Cut into Wedges
2 sweet potatoes, cut into wedges
1 red onion, sliced
1/2 teaspoon sweet paprika
1/4 teaspoon cumin
1/4 teaspoon chili powder
salt and pepper to taste
1/2 tsp Cinnamon
2 Tbs Honey or Sugar
olive oil ( about 1/4 cup) enough to coat

Preheat broiler to 500.

Generously rub pork with olive oil, lightly coating it, then season well with salt and pepper.

Place the seasoned pork on broil-safe sheet tray and broil for 7 minutes, then remove from oven, flip and broil 7 more minutes to brown the loin evenly on both sides.

In the meantime combine the cinnamon and honey (or sugar) until mixed, then add in the apples, tossing to coat.

In another bowl combine the paprika, cumin and chili powder. Place the sweet potatoes and onions in a bowl, drizzle with olive oil to lightly coat. Sprinkle with the spices and toss gently to coat.

Arrange the seasoned fruit and vegetables on sheet tray around pork roast.

Reduce the Oven temperature to 450F; Roast for 20-30 minutes,until apples and sweet potatoes are tender and meat reaches 120-125 degrees.

Remove from oven and allow the meat to restat least 10 minutes before slicing and it will continue to cook and will be juicy! Return sliced pork and juices to the pan. If you make the mistake of cooking the pork to 140- it will continues cooking once it comes out of the oven and it will be dry.

Serve sliced pork with sweet potatoes, apples, onions and a side salad.
