(Serves 8-10)
5lb potatoes
6 boiled eggs
1 green pepper
1 medium onion
about 2 cups Hellmann’s mayo
salt & pepper to taste
paprika (to sprinkle on top)
Peel & chop potatoes. Boil potatoes & eggs. Drain. Peel eggs & chop. Chop pepper & onion. Put potatoes, eggs, onion, & green pepper in a bowl. Mix with mayo & salt & pepper. Sprinkle with paprika.
(Even better the next day – after it has had time to sit & the flavors can meld.)
