Pimento Cheese Deviled Eggs
4 hard-cooked eggs, peeled
2 tsp softened butter
1/2 tsp Dijon style mustard
2 tbs mayonnaise
1/2 tsp Tabasco or Crystal hot sauce (or to taste)
Pinch fresh ground white pepper
1/8 tsp kosher salt (or to taste)
1 tbs finely minced roasted red pepper
1-oz aged cheddar cheese, very finely shredded
1-1/2 tsp finely minced or grated onion
Cut the eggs in half and remove the yolks to a small bowl.Add the butter, mustard, hot sauce, salt and pepper to the yolks and beat on medium speed with a hand mixer until the yolk mixture is smooth.
Stir in the red pepper, cheese and onions until well distributed. Adjust the seasoning.
Spoon the yolk mixture into a piping bag fitted with a star tip or into a heavy sealable plastic baggie. If using the baggie, cut off a little from one of the corners to form a small hole.Pipe the yolk mixture into the egg white halves. If you like, garnish with a sprinkling of sweet paprika.
(Note: Most people don’t think of making deviled eggs — much less anything as tasty as this recipe — for just the two of them! This makes a great appetizer or snack…you decide how you want to use it;->)
