This is from my dd…she found a restaurant and made friends with the chef;-d he gave her his recipe if she promised not to reveal her source! lol!
she adapted it to serve 4 and shared with me.
Cold Sesame Noodles
1 lb spaghetti or linguine5 tbs sesame oil
5 tbs soy sauce
2 tbs rice vinegar
2 tsp chopped fresh ginger
1 clove garlic, minced
2 tsp kochujang (Korean chili pepper paste)
1 carrot, grated
3 Persian or Kirby cucumbers, sliced into strips
1 sweet red pepper, sliced into strips
2 scallions, sliced
1/2 cup chopped peanuts
Cook the pasta according to package directions.
While the pasta is cooking, combine the sesame oil, soy sauce, rice vinegar, ginger, garlic, chili pepper paste, carrots, cucumbers, peppers, scallions, and peanuts in a large mixing bowl.
When the pasta is done cooking, drain and rinse under cold water.Drain well to get rid of any excess water.Toss the cooled pasta with all the dressing and vegetables in your mixing bowl.
