What can you do with leftover cranberry sauce? Try this:
Cranberry Meatballs
48 frozen cooked meatballs (or make your own. When I find ground beef on sale [or in the mark-down bin], if the quantity is large enough, I'll make all of it into meatballs and freeze on cookie sheets. Then I'll bag 'em by the dozen for future use. Since the meat is raw, I don't have to use them as meatballs...giggle...)
1/2 cup cranberry sauce
1/4 cup orange juice
2 tbs sugar
1 tbs finely minced ginger root

1/8 tsp white pepper
Bake the meatballs according to package directions until well heated or if fresh, until cooked thoroughly. Meanwhile, in a large saucepan, combine cranberry sauce, orange juice, brown sugar, gingerroot, and pepper. Cook over medium heat about 5 minutes until bubbly. Add meatballs to sauce and stir. Serve with toothpicks.
