To 5 pounds of hamburger,
add: Morton's Tender-Quick Curing salt 2 1/2 tsp.
mustard seed 2 1/2 tsp.
coarse pepper 2 1/2 tsp.
garlic salt (substitute 1 clove fresh garlic, crushed fine, for each tsp. garlic salt),
1 tsp. crushed red pepper, (Optional)
1 tsp. hickory-smoked salt

Mix well. Put in a bowl, cover and refrigerate. Take out once a day and mix, for 5 days. Form in rolls 3 x 10 inches.

Lay on a broiler pan rack and bake at 140 degrees for 8 hours. Turn once in awhile.
