Healthy Carrot Hummus
1 cup chopped carrots
15-ounce can of chick-peas, drained and rinsed
1/4 cup tahini
2 tbs fresh parsley
1 tbs of lemon juice
1 large garlice clove
1/8 teaspoon salt

Boil carrots in just enough water to cover until fork-tender. Then place all ingredients in a food processor and blend until smooth. Chill and serve with fresh vegetables, whole grain chips, or use in place of mayonnaise on a sandwich. Makes about 2 cups.
