We just make up a fruit smoothie any way you want. Then pour it evenly into an ice cube tray. Put it in the freezer and after about 15 minutes take it out and put a toothpick in the center of each cube (to use as the stick). Put it back in the freezer and wait another couple of hours and you'll have popsicle bites. Just right for a mini cool down.

    Default Watermelon Blueberry Popsicles

Here's nana's recipe for watermelon blueberry popsicles.

3 3/4 cups chopped seedless watermelon
    2 tablespoons lime juice
    1-2 tablespoons sugar
    1 cup fresh blueberries

Combine the watermelon, sugar and lime juice in a blender and puree until it's nice and smooth.

Dump the whole blueberries amongst each of 6 popsicle molds, then fill with the watermelon mixture.

Freeze 3-4 hours before attempting to remove from the molds. These are really easy to make and have great flavor on a hot summer day!

Default Vegan Black Bean Fudge Pops

Last year we switched to vegan I found this recipe for Vegan Black Bean Fudge pops. You can't taste the black beans at all!

1 1/2 cups cooked black beans or 1 can (15 ounces), rinsed and drained
1 can (14 ounces) light coconut milk
    1/4 cup unsweetened cocoa powder
    3 tablespoons agave nectar
    2 teaspoons vanilla extract

Combine everything in a blender or food processor and puree them all until it's very smooth. Then pour into popsicle molds or dixie cups and insert sticks.

Remember to leave a little space for these, they expand quite a bit when they freeze.

    It makes 6 Big Pops.

My first recipe is just simple. Use Koolaid mix and add extra sugar as necessary and pour into ice cube tray, when more solid add sticks. You can also add fruit as a treat in them and just use as ice cubes to float in punch bowls.

    Default Pickle Pops or Picklesicles

These are great when you're pregnant or if you have teens that love pickles. Personally, I like them right after a great workout because they instant stop leg cramps.

    Ingredients:
    7 large pickles
1/4 cup of pickling juice (from pickle jar)
    1/4 water

put the pickles in the blender and puree them. Strain them to get as much juice out as you can. Then add the pickle juice straight from the jar and water. Mix together and pour into molds.

    Freeze overnight.

I take my grand-children's favorite drinks and fruit juices and put them in some small molds that I have and then freeze them. They love it.

    Banana Split Ice Cream Popsicle

    serves approximately 12-14 popsicles

3 bananas (2 ripe and one fresh)
2 cups vanilla ice cream, softened
14 medium strawberries, washed and chopped
14 maraschino cherries (1 per popsicle)
1 recipe homemade magic shell (see MYO Magic Shell)
1 cup salted roasted peanuts, chopped

    Chop fresh banana. Set aside.

In a large bowl smash 2 ripe bananas with a fork. Add chopped banana and ice cream. Stir to combine. Add strawberries, fold into mixture.

Add 1 cherry to the bottom of each popsicle mold. Pour ice cream mixture into molds. Cover and place sticks into the mold. Freeze for 12 hours.

Spread chopped peanuts across a shallow plate. Dip popsicles into homemade magic shell (in a tall, thin glass or canning jar) and then immediately place on peanuts. Flip and place on a cookie sheet and freeze or serve immediately.

    Homemade Magic Shell

2 cups Milk Chocolate Chips (or your favorite flavor)
    1/4 cup coconut oil

Combine ingredients in a wide microwave safe bowl, heat at 30 second intervals until chips are almost completely melted. Stir to combine and allow to cool.

Transfer to a tall mason jar. Dip into jar or pour topping over frozen treats.

    OR

    1 pkg (6oz) chocolate chips
    1/2 stick butter or margarine
1/4 cup Mazola oil (you can use any Pure Corn oil)

In a double boiler melt chips and butter together. When melted add oil. Pour over ice cream and it will harden

I use Crystalite and make it with less water and add a bit more sweetner--to taste. I have a partial Tupperware set of molds (kids lost the rest) so I make up only two or three at a time.

    Default Mocha Ice Pops

These are pretty easy to make.

2 1/2 cups hot brewed coffee
    4-5 tablespoons sugar
    2 tablespoons unsweetened cocoa powder
    1 cup half-and-half
    1/4 teaspoon vanilla extract
    Pinch of salt

Dissolve the sugar in the hot coffee, then add in the rest of the ingredients. Don't omit the salt, it keeps them from having a bitter taste.

Pour into molds and freeze overnight. Makes 8-10 pops

I put seedless watermelon in the blender and blend just enough to become liquid. Then I put chopped fresh fruit (what ever I have)into a mold and fill with the watermelon liquid, & freeze. Very refreshing and yummy

I have so many FAVORITES it is hard to choose! My fun one this summer had been to put gummy bears in the molds (about 10-15) depending on size of molds) and then fill the mold up with Sprite or 7-Up! They are so pretty, refreshing and a splashing hit with the kids too! One of my daughters is absolutely crazy for these, and went home and started making her own!!! She is 21 years old!!!
