Melon Salad
2 1/2 cups boiling apple juice
2 packages (4-serving size) JELL-O Watermelon Flavor Sugar Free
1-1/2 cup cold seltzer or club soda
1 teaspoon lemon juice
2 cups cantaloupe and honeydew melon cubes
Stir boiling juice into gelatin in large bowl at least 2 minutes until
completely dissolved. Stir in cold seltzer and lemon juice. Refrigerate
about 1-1/2 hrs or until thickened (spoon drawn through leaves definite
impression) Stir in melon cubes. Spoon into 6-cups mold.
