Cheap and Easy Meal (Summertime Pasta Salad)
Okay, this is my first post here, so bear with me 🙂 I don’t know if this can be made for under $5, but we *live* on this stuff in the summertime, so I’d thought I’d share…..I take this to potlucks, get-togethers, and parties, and someone always asks me for the recipe (even though I throw it together by “eyeing it”, lol)
Summertime Pasta Salad1 16-oz. box of vegetable pasta spirals
2 cucumbers, peeled and sliced
1 or 2 containers grape or cherry tomatoes, halved
1 large sweet onion, diced
1 16-oz. jar green olives, drained (slice the olives in half)
1 32-oz. jar Ranch dressing (or use your own homemade)
(I say a 32-oz. jar, but you may use less)Cook and drain the pasta according to package directions. Rinse well with cold water and drain again. Put the pasta in a large bowl and add the tomatoes, cucumbers, sweet onion, and olives. Toss till well mixed. Pour the Ranch dressing on, stir to coat everything evenly, and refrigerate for at least 2 hours. YUM! These ingredients are approximate, so if you like more cukes and ‘maters–add them! Hope you all enjoy this as much as my family does!
