pork roastok… you will need to bear with me here, i don’t exactly have a recipe
for this one, but, it was so incredibly delicious, that i wanted to
share with you what i made! i started out with a pork sirloin roast. iseasoned it liberally with grilling seasonings (i use mccormick montreal
steak seasonings) and a little additional freshly ground pepper. then i
seared the roast in a small amount of vegetable oil in a cast iron dutchoven. when it was finished searing, i added some chicken stock, a can of
diced tomatoes, half of a diced onion and a teaspoon of cumin and let
this braise over low heat for several hours (about 3), until the roastcould cut easily into chunks with a knife. I cut the roast into chunks,
and then added some carrot chunks and 3 cloves of garlic, crushed and
diced. I let this simmer over medium heat for about a half an hour, until the broth had reduced and made a nice soupy, stew like
consistency. I served this over rice. This was the most amazingly
delicious dish I have created in a very long time. It was spicy, savory, and just out of this world! (Even if I do say so myself!) I know it’s
probably a little difficult to follow because it’s not in recipe format.
But I hope that you can understand it, and try it for yourself! It’s soYum!!! ~Anne – thanks Anne
