Hot Chili Bowl

1 box (8 oz) rice & black or red bean mix
12 oz hot or sweet Italian sausage, removed from casings
2 cans (14 1/2 oz each) zesty diced tomatoes with mild green chilies

Nice to have:
Reduced-fat sour cream and sliced scallions

1. Cook rice mix in a medium saucepan as package directs, omitting
oil or butter.

2. Meanwhile cook sausage in a large nonstick skillet over medium-
high heat, breaking up clumps with a wooden spoon, 5 minutes or until

no longer pink. Drain off fat.

3. Stir in tomatoes and 1/2 cup water. Bring to a boil, reduce heat
and simmer, uncovered, 12 minutes or until slightly thickened.

Serve
on rice; top with sour cream and scallions
