1 medium fresh pineapple-peeled, cored, and chopped
1 red bell pepper-chopped
1 red onion-chopped
2 cloves garlic-minced or grated
s and p-to taste
1 tbsp fresh parsley-minced
1 tsp fresh cilantro-minced
1 jalapeno pepper-minced *Can remove seeds and ribs if desired*
1/2 cup 100% orange juice
1/3 cup 100% lime juice
1 1/2 lb large shrimp-peeled and deviened
4-5 cups cooked wheat rotini pasta
grated/shredded parm cheese *OPTIONAL*
1. In a large bowl, combine pineapple, garlic, bell pepper, onion, jalapeno, s and p, parsley, cilantro, and juices.
2. Grill the shrimp 2 minutes each side.

Toss the pasta with the salsa.
4. Add shrimp on top. Can top with grated parm cheese for extra flavor.
