Liss Notes: This one can be expensive if you live inland. We are right on
the coast of Maine, (within an hour or so) and we purchased bushels of
shrimp each early spring when they are running (& therefore dirt cheap).
This makes a delicious appetizer for any gathering.Baked Stuffed Shrimp
Ingredients:
15 large shrimp
2 cups flavored bread crumbs (MYO)
8 Ritz-type crackers, crushed (MYO)
1 cup butter, meltedDirections:
Preheat oven to 350.
In a medium bowl mix bread crumbs, crackers, and butter until firm.
With a knife split each shrimp down the middle but not all the way in
half.
Using the mixture place about 2 Tbsp. in each split shrimp.
Bake shrimp for about 8 minutes on 350 degrees or until pink.
Also, you can broil the shrimp for about 1 minute and then stuff with
the mixture.
After baking ,dip stuffed shrimp into melted butter.
