      Easy Pork Skillet

      Enjoy the flavors of pork, ramen noodles and fresh veggies in this

      done-in-a-flash stir-fry.

      Prep Time:10 min

      Start to Finish:20 min

      Makes:4 servings (about 1 cup each)

      1 tablespoon vegetable oil

      3/4 pound pork tenderloin, cut into 1/8-inch strips

      2 packages (3 ounces each) pork-flavored ramen noodles

      1 1/2 cups water

      1 medium red bell pepper, cut into 3/4 inch pieces (1 cup)

      1 cup broccoli flowerets

      4 medium green onions, cut into 1-inch pieces (1/2 cup)

      1 tablespoon chopped fresh parsley or 2 teaspoons parsley flakes, if

      desired

      1 tablespoon soy sauce

      1. Heat 12-inch skillet or wok over medium-high heat. Add oil; rotate

      skillet to coat side.

      2. Add pork; stir-fry about 5 minutes or until pork is no longer

      pink.

      3. Gently break apart noodles. Stir noodles, seasonings from flavor

      packets and remaining ingredients into pork. Heat to boiling. Boil 3

      to 4 minutes, stirring occasionally, until noodles are completely

      softened.

      Pasta and Bean Skillet

      Prep Time:10 min

      Start to Finish:30 min

      Makes:4 main dish servings

      1 cup Old El Paso salsa (any variety)

      2/3 cup uncooked elbow macaroni (2 ounces)

      3/4 cup water

      2 teaspoons chili powder

      2 cups Progresso red kidney beans (from 19-oz can), drained, rinsed

      1 can (8 ounces) tomato sauce

      1/2 cup shredded Cheddar cheese (2 ounces)

      1. Heat all ingredients except cheese to boiling in 10-inch nonstick

      skillet; reduce heat.

      2. Cover and simmer about 15 minutes, stirring frequently, until

      macaroni is tender. Sprinkle with cheese.

      Spinach and Chicken Skillet

      Prep Time:10 min

      Start to Finish:25 min

      Makes:6 servings

      6 boneless skinless chicken breast halves (1 3/4 pounds)

      1 cup fat-free (skim) milk

      1/2 cup fat-free chicken broth

      1 medium onion, chopped (1/2 cup)

      1 bag (10 ounces) washed fresh spinach, chopped

      1/4 teaspoon salt

      1/4 teaspoon pepper

      1/4 teaspoon ground nutmeg

      1. Remove fat from chicken. Spray 12-inch nonstick skillet with

      cooking spray; heat over medium heat. Cook chicken in skillet 2

      minutes on each side; reduce heat to medium-low. Stir in milk, broth

      and onion. Cook about 5 minutes, turning chicken occasionally, until

      onion is tender.

      2. Stir in spinach. Cook 3 to 4 minutes, stirring occasionally, until

      spinach is completely wilted and juice of chicken is no longer pink

      when centers of thickest pieces are cut. Remove chicken from skillet;

      keep warm.

      3. Increase heat to medium. Cook spinach mixture about 3 minutes or

      until liquid has almost evaporated. Stir in salt, pepper and nutmeg.

      Serve chicken on spinach.

      Chili Macaroni Skillet

      Prep Time:5 min

      Start to Finish:35 min

      Makes:5 servings

      1 pound bulk pork sausage

      1 package Hamburger Helper chili macaroni

      3 1/2 cups hot water

      2 teaspoons chili powder

      2 cups Progresso diced tomatoes (from 28-oz can), undrained

      1 can (15 to 16 ounces) pinto or kidney beans, rinsed and drained

      1 can (8 1/2 ounces) whole kernel corn, drained

      Shredded Cheddar cheese, if desired

      Additional chili powder, if desired

      1. Cook sausage in 12-inch skillet over medium-high heat, stirring

      occasionally, until no longer pink; drain.

      2. Stir in uncooked Pasta, Sauce Mix and remaining ingredients except

      cheese and additional chili powder. Heat to boiling, stirring

      frequently.

      3. Reduce heat; cover and simmer 14 to 16 minutes, stirring

      occasionally, until pasta is tender. Remove from heat and uncover

      (sauce will thicken as it stands). Sprinkle with cheese and

      additional chili powder.

      Simmer 15 to 20 minutes.
