    Default Pina Colada Muffin Mix

    Pina Colada Muffin Mix

    2 cups flour

    1 cup sugar

    1 TBSP baking powder

    1 tsp. salt

    4 oz.(1/2 cup) flaked coconut, toasted

    Layer the above ingredients into a bag or a jar and attach the
    following directions:

    Pina Colada Muffins

    1 jar pina colada muffin mix

    2 eggs, beaten]

    3/4 cup milk

    1/4 cup oil

    4 TBSP butter or margarine, melted


    1 tsp. vanilla

    1/3 cup crushed pineapple (in its own juice)

    Heat oven to 350. Empty contents of jar mix into a large bowl and
    mix together. Blend in eggs, milk, oil, butter, and vanilla.

    Mix
    well. Stir in pineapple and mix well. Spoon into a 12-unit muffin
    pan and bake for about 30 minutes.
