How to Make Keto Bread  from our Keto Bread Machine Yeast Bread Mix

The oat fiber in this recipe is Not ground oats, or oat flour. Oat fiber is made by grinding and purifying the outermost protective layer of the oat grain itself. It’s a great source of insoluble dietary fiber, which is what helps keep your carb count down. Luckily while it provides a grain-like flavor and texture, oat fiber is a zero impact ingredient. The vital wheat gluten provides both texture and is a wonderful source of protein.

The trick to getting the perfect texture to this keto bread is weighing all of the ingredients. This serves several purposes, first, the ingredients in Keto baking are less forgiving than traditional baking ingredients, they require just the right moisture ratio to achieve a decent crumb.

Otherwise, they can be doughy, tough or other ill effects. Secondly, when measuring by hand it’s easy to have a heavy hand and use too much. Let’s face it, the ingredients are not cheap so we don’t want to waste ANY of them.

Measure and weigh the oat fiber, flaxseed meal, vital wheat gluten, powdered sweetener, salt, and xanthan gum.

Mixing them together until combined, set aside.

Mix the beaten eggs and water together until smooth, add the honey. Don’t worry about this as a sugar, the yeast literally consumes the sugar and converts to gas, it will not affect your ketosis.

Pour the egg mixture into the bread machine pan which has been carefully seated into the bread machine.

Gently shake the dry mixture on top.

Measure the yeast directly into the middle.

Add the room temperature pats of butter all the way around the top, careful not to get in in the yeast.

Close the lid and hit the start button!

If you want to make your own make ahead mixes, combine all of the dry ingredients EXCEPT for the yeast and label it with finishing directions to add the water, eggs, honey, yeast and butter.  If you don’t have a bread machine, here’s how to make it without a machine.

1 cup slightly warm water 90F (240ml/8.1oz)
2 Eggs, room temperature, lightly beaten
1 teaspoon Raw Honey (7g/0.25oz)
1/2 cup of Oat Fiber (41g/1.45oz)
2/3 cup of Flaxseed Meal (70g/2.46oz)
1.25 cups of Vital Wheat Gluten (190g/4.9oz)
4 Tablespoons Powdered Sweetener (30g/2oz) (I used Erythritol) WEIGH IT.
1/2 teaspoon Xanthan Gum (2.5g/0.88oz)
1 teaspoon Salt (6g / 0.21oz)
2 Tablespoons Butter, room temp (30g/1.05oz)
1 Tablespoon Traditional Active Dry Yeast (do not use bread machine rapid rise yeast for this recipe)

Measure and weigh each of the dry ingredients into a mixing bowl, except the yeast. Mix well. Set aside.

Mix the beaten eggs and water together until smooth, add the honey, Mixing well.

Pour the egg mixture into the bread machine pan which has been carefully seated into the bread machine.

Gently shake the dry mixture on top.  Measure the yeast directly into the middle. Add the room temperature pats of butter all the way around the top, careful not to get in in the yeast.

Close the lid and hit the start button! We used the general white bread setting on the medium crust setting. Come back in 3 hours to delicious hot fresh bread.

Keto Bread Machine Yeast Bread Mix Recipe

 

Traditional Method:

1 cup warm water 100°-110°F  (240ml/8.1oz)
1 teaspoon Raw Honey (7g/0.25oz)
2 Eggs, room temperature, lightly beaten
2 Tablespoons Butter, melted (30g/1.05oz)
1/2 cup of Oat Fiber (41g/1.45oz)
2/3 cup of Flaxseed Meal (70g/2.46oz)
1.25 cups of Vital Wheat Gluten (190g/4.9oz)
4 Tablespoon powdered Sweetener (30g/4oz) (I used Powdered Erythritol- WEIGH IT, Don’t just Measure, it will be WRONG otherwise)
1/2 teaspoon Xanthan Gum (2.5g/0.88oz)
1 teaspoon Salt (6g / 0.21oz)
1 Tablespoon Traditional Active Dry Yeast (do not use bread machine rapid rise yeast for this recipe)

Combine all of the dry ingredients except the yeast, mix and set aside.

In the bowl of a stand mixer (such as a KitchenAid) Combine yeast, water, and honey, let it proof about 5-6 minutes. Make sure the water temperature is 100°-110°F. In the meantime mix the eggs and melted butter together.

Add 1/2 of the dry ingredients to the proofed yeast mixture, add half the egg/butter mixture, mixing, add remaining dry ingredients and egg/butter mixture to the bowl and continue mixing with the kneading attachment. Let it knead for 10 minutes or so. You really want the dough to have a smooth texture.

Transfer it to a loaf pan that has been misted with olive oil, let it rise for 45 minutes to an hour. Preheat oven to 375°F

Bake for 25 Minutes

Tricks for Getting the Perfect Rise

The trick to getting it to rise is to keep it in an entirely draft-free place while it’s rising. Though it’s yeast, it lacks the normal flours necessary for a rise.

Preheat your oven to 150F while you’re preparing the dough. Immediately shut the oven off, insert a loaf pan half full of HOT water onto the bottom rack and then place your dough in glass or metal bowl that has been lightly misted with olive oil and covered with a clean lint-free cheesecloth or cotton cloth.

I adapted my keto bread from this video that I saw on the Keto King. I made the mistake on my bread machine of not making sure that the paddles were seated completely in the bottom, so they came off during the second kneading cycle. No worries, they pop right off once the bread is cooled and don’t hurt anything.

    • No, this is not a sweet bread. If you add Erythritol, which is a sugar alcohol, to your bread it changes the density and crumb. You can leave it out entirely, it will change the texture and density of your bread.

    Turned out incredible! Great recipe and great instructions! Now I want to try to make it into my mother’s Panatone recipe which has a 1/2 cup of sugar (no problem I’ll use monk fruit) and a 1/2 a bottle of anise extract. Any ideas of how to change it would be appreciated!

    Finally—a keto bread that isn’t dense or eggy! I used my older bread machine and it worked like a charm. Sliced it thin for avocado toast and it held up beautifully.
