Boozsicles are refreshing boozy popsicles for adults only! These delicious blends contain just the right amount of alcohol to still freeze well, but offer a cooling treat for those super hot days. Think of it as a cocktail on a stick, if you will.
Here are four of our favorite boozsicle recipes to help keep you cool and refreshed this summer. We’ve even tossed in a little fresh fruit to the mix, you know, to make them “healthy”.
Boozsicles – Boozy Popsicles for Adults
Basil Mint Citrus Mojito Popsicles
6 fresh mint leaves
6 fresh basil leaves
3/4 C fresh squeezed orange juice
1 Tbs lemon juice
1 Tbs lime juice
1 1/2 T sugar
1/2 C crushed ice
2 T rum
Combine all the ingredients in a blender, blend just until combined, pour the liquid into your favorite popsicle molds and freeze.
Bourbon and White Peach Popsicles
2 cups chopped white peaches or regular peaches
1 Tbsp. fresh lemon juice
2 Tbs honey
2 1/2 Tbsp. Knob Creek Straight Bourbon Whiskey
Combine all the ingredients in a blender, blend just until combined, pour the liquid into your favorite popsicle molds and freeze.
Blueberry Cabernet Cheesecake Popsicles
1 pt. blueberries, pureed
1/2 c. cabernet
1/4 c. simple syrup
1/4 c. heavy cream
1/4 c. cream cheese
4 tbsp. sugar
1/4 c. graham cracker crumbs
- Combine pureed blueberries, wine and simple syrup, set aside.
- In a cold mixing bowl beat heavy cream adding sugar gradually until soft peaks form. Fold in the cream cheese.
- Transfer 1/4 of the cream cheese mixture into a small bowl and add the graham cracker crumbs.
- Transfer each of the three mixtures into Ziploc-style bags. Cut the corner off each bag and pipe the ingredients in layers into popsicle molds, starting with the blueberry layer and ending with the graham cracker mixture layer.
Kiwi Martini Boozsicles
2 cups kiwi, peeled and chopped
1/4 cup simple syrup
1/4 cup citrus vodka
1 cup ice
Combine all the ingredients in a blender, blend just until combined, pour the liquid into your favorite popsicle molds and freeze.
Boozy Pudding Pops
You can also make absolutely delicious boozy chocolate bomb pudding pops by layering the boozy chocolate bomb pudding mixture with the toasted almond pudding mixture in your favorite popsicle molds and freezing them overnight.
Simple Syrup
Some of the recipes above call for a simple syrup. While simple syrups can be flavored ahead of time, each of the above listed recipes is calling for plain simple syrup only. This syrup is just equal portions of sugar and water heated to ensure the sugar dissolves completely and isn’t grainy when used in your favorite recipes.
1/2 c. water
1/2 c. sugar
Combine the ingredients in a saucepan over medium heat until the sugar dissolves complete and the edges of the liquid start to simmer. The syrup should be clear, not cloudy. Immediately remove from heat, cool.
You can store basic simple syrup in an airtight container in the refrigerator for up to 3-4 weeks.
Long Island Iced Tea Popsicles
1 (12-oz.) can Coca-Cola
1/4 c. vodka
1/4 c. tequila
1/4 c. gin
1/4 c. light rum
1/4 c. triple sec
2 tbsp. lemon juice
Combine the Coca-Cola, vodka, tequila, gin, rum, triple sec, and lemon juice in a pitcher or large measuring cup. Equally divide the mixture in your favorite popsicle moulds.
Freeze until solid, at least 5 hours, and up to overnight.
