Making candy during holidays or other special occasions has been a tradition in my family. When we switched to a keto lifestyle, my kids thought our candy-making days were over. Boy were they ever WRONG! Here’s my favorite Southern Pecan praline recipe converted into gratifying keto pecan pralines!

How to Make Keto Pecan Pralines

In order to “Ketofy” these wonderful pecan pralines, you’ll need some Keto brown sugar. While you can use brown Swerve or Sukrin gold, we highly recommend that you make your own keto brown sugar to achieve the best flavor.

Combine all of the ingredients, except the vanilla. Cook over medium heat, stirring frequently until the mixture reaches 238 degrees or “soft ball” stage. Remove from heat and stir in vanilla.

Now, Using a heavy wooden spoon, stir the mixture rapidly until the candy thickens slightly and becomes cloudy and grainy. At this point, the pecans should be floating in the candy mixture and should no longer sink to the bottom.

The stirring stage is very important and the key to making a good praline! The pot must be stirred constantly. Keep stirring mixture until it becomes grainy and thick – if it is still liquidy, it’s not ready.

Drop by spoonfuls onto the prepared pans, working quickly before the candy sets. Allow the pralines to cool completely before removing from baking sheets.
