Getting derailed when you follow a keto lifestyle is frustrating and can completely throw you off your game altogether. Having a variety of tasty keto cucumber boats on hand for snacks or even light lunches is a great way to hold you over and keep you from reaching for something you might regret later.
I opt to use mini cucumbers, they’re often sold in two pound bags at any of your favorite grocery stores. They’re easier to eat and store nicely in containers.
Keto Cucumber Boats
These crunchy keto cucumber boats offer a variety of fillings and varying textures to keep your taste buds happy. If you want a larger variety, split the salads up. For example, make a batch of tuna, divide it in half and add scallions, celery, and bell pepper to one, and shredded carrots and fresh chopped cilantro to the other.
1Choose a Base Salad
Chicken Salad
You’ll Need:
1 cup diced cooked chicken or 1 large can of chicken, drained
1/4 c. Mayonnaise
salt & pepper
Combine the ingredients, mixing well. Add whatever additional flavor options you prefer.
Tuna Salad
You’ll Need:
2 6oz cans White Meat tuna (packed in water), drained
1/3 c. mayonnaise
Combine the drained, flaked tuna with the mayonnaise, mixing well. Add whatever additional flavor options you prefer.
Egg Salad
You’ll Need:
4 Hard-Cooked Eggs
1/4 c. Mayonnaise
3/4 tsp ground mustard
Dash Salt & Pepper
Halve the eggs, removing the yolks. Place the yolks in a bowl and mash them with mayonnaise, mustard, salt, and pepper until the mixture is smooth. Dice the egg whites and mix them with the yolk mixture, stirring well. Add whatever add-ins you prefer.
2Choose an Add-in
Now that you have a base salad to start with, choose one or more of the following items to give it a bit more flavor.
Add-ins
- 2 Tbs Thinly sliced Scallions
- 1 Tbs. Jalapeno slices or diced pickled jalapeno
- 1 Tbs. Bell Pepper (red or green)
- 1 Tbs. Cilantro (fresh, chopped)
- 1 Tbs Italian Parsley (fresh, chopped)
- 1 Tbs Rosemary (fresh, chopped)
- Chopped celery
- 2 Tbs. shredded cheese (mozzarella, cheddar, pepper jack, etc)
- Garlic- 1 clove, minced
- 1 Tbs Minced Red onion
- 1 Tbs Whole Grain Mustard (particularly good in Tuna or Egg Salad)
- 2 Tbs Bacon Bits
- 1-2 Tbs Pesto
- 1/2-1 tsp of Curry Powder
- Dash of hot sauce, 1/2 tsp Minced garlic and a dash of Paprika
- Diced Radishes
- chopped pickles
- Cauliflower Hummus
Cut the top of the cucumber off and scoop out the seeds using a spoon. Fill with your favorite salad variation from above. The possibilities are endless. If you happen to have leftover ham, you can make a simple ham salad.
