Keto Caramel Topping

This simple keto caramel topping is wonderful for adding to keto ice cream sundaes or as a tasty addition to homemade keto coffee creamer.

You’ll notice that we use Bochasweet as our sweetener of choice in this caramel recipe. It cooks smoothly at the same ratio as traditional sugar. It offers the same flavor as sugar, without an insulin response. It’s the only keto-friendly sweetener that we’ve found that literally does not cause any intestinal distress at all, no gas, no bloating, and zero aftertaste.

I’ve been told that allulose will work just as well, but I have not tried it yet in this recipe. If you do, please let us know how it turns out!

Keto Caramel Topping

You’ll Need:
2 cups heavy whipping cream
2/3 cup BochaSweet
3 tbsp butter
1/4- 1/2 tsp xanthan gum

Keto Caramel Topping Crockpot Version

Turn slow cooker on low. Mix the cream and Bochaweet together in the crock of the slow cooker.

Use the handle of a wooden spoon or a skewer under the edge of the lid to prop it up a little to prevent condensation from dripping into the caramel.

Let the mixture cook overnight. In the morning, vigorously whisk the butter, and xanthan gum into the caramel. It should be a deep caramel color, if it’s not, allow it to cook another couple of hours.
