Cake Mix Cookies

Cake Mix Cookies are delicious, soft, chewy cookies that require just 3 ingredients to prepare! You’ll Need: 1 Cake Mix (any flavor), 2 large eggs, 1/2 cup oil or butter

Chocolate Cake Mix Cookies

1 box Devils Food Chocolate Cake Mix
2 Large Eggs
1/2 c. vegetable oil or 1 stick of melted butter (not margarine)

  1. Preheat the oven to 350°.
  2. Combine all of the ingredients, mixing well until incorporated. Then stir in any additions if desired. Use a cookie dough scoop to drop the dough balls on parchment paper or a silpat.
  3. Bake at 350°F for 9 to 12 min.
  4. Cool the cookies for 2 min on the cookie sheets, then remove to wire racks to cool using a wide and thin spatula.
  5. Store the cookies in an airtight container at room temperature. Makes 30

Optional Add-ins:

Add 1 1/2 cups total of any of the following (alone or in combination!)
Milk Chocolate Chips, or Semi-Sweet Chocolate Chips, or Dark Chocolate chips
White chocolate chips
Chopped up candy bar pieces (any type)
Chopped Walnuts
Chopped pecans
Chopped cashews

1 box Carrot Cake Mix
2 Large Eggs

Cream Cheese Frosting

3/4 c. Butter
12 oz cream cheese, room temperature
4-5 c. Powdered Confectioners Sugar
2 teaspoons Vanilla Extract

Cream the butter and cream cheese together until smooth, add the vanilla extract, beating well to combine. Gradually add the confectioners’ sugar, 1 cup at a time, whipping until light & fluffy.

Butterscotch Toffee Cake Mix Cookies

2 large eggs, room temperature
1/2 cup canola oil
1 package butter pecan cake mix (regular size)
1 package (10 to 11 ounces) butterscotch chips
1 package (8 ounces) milk chocolate English toffee bits

  1. Preheat the oven to 350°.
  2. Combine all of the ingredients, mixing well until incorporated.
