Cinna-bun Cake is a delicious cinnamon roll style coffee cake without the effort or mess of rolling out dough! Perfect for feeding a big crowd for brunch or even as a dessert, this tasty cinna-bun cake goes fantastic with a generous sized mug of coffee.
We’ve provided three versions of this recipe, a generous 9″x13″ pan for a large family or potluck share, as well as a small 9″x 9″ version for a smaller family, and an air-fryer version.
How to Make Cinna-bun Cake
Combine flour, salt, sugar, baking powder, milk, eggs and vanilla in a mixing bowl, stirring to combine.
Add the melted butter, mixing just until incorporated.
Transfer the batter into a lightly buttered baking dish.
In a small bowl combine the topping ingredients, mixing until smooth.
Drop by teaspoonfuls evenly over the cake batter base.
Use a butter knife, drag it through the topping drops/batter to swirl the topping into the base.
Pop this deliciousness into the oven and bake until it’s golden brown.
While the cake is baking, prepare the glaze by mixing the powdered sugar, milk, and cinnamon together, then set it aside until the cake is done.
Set the glaze aside until it’s needed.
Remove the cake from the oven, let it cool ten minutes, then glaze the cake while still warm.

Cinna-bun Cake Recipe
Cake Ingredients:
3 cups flour
1/4 teaspoon salt
1 cup sugar
4 teaspoons baking powder
1 1/2 cups milk
2 eggs
2 teaspoons vanilla
1/2 cup butter, melted
Topping:
1 cup butter, softened
1 cup brown sugar
2 tablespoons flour
1 tablespoon cinnamon
Glaze:
2 cups powdered sugar
5 tablespoons milk
1 teaspoon vanilla
1 1/2 teaspoons cinnamon
Cinna-bun Cake Directions
- Preheat oven to 350°F. Lightly butter a 9″ x 13″ baking dish.
- Mix all of the “cake” ingredients together, EXCEPT the butter. Add the melted butter last, and then pour into the prepared baking dish.
- Mix all of the topping ingredients together in a separate bowl. Drop by teaspoonfuls over the cake batter base, evenly.
- Using a butter knife swirl the topping into the base. Bake for 28-30 minutes.
- While the cake is baking, prepare the glaze and set aside.
- Remove from oven and glaze the cake while still warm.
Small Cinna-bun Cake
Maybe you don’t have a crowd to feed and just want a delicious coffee cake for a smaller family. Here’s a half-pan version for you.

1/8 teaspoon salt
1/2 cup sugar
2 teaspoons baking powder
3/4 c. milk
1 egg
1 teaspoon vanilla
1/4 cup butter, melted
Topping:
1/2 cup butter, softened
1/2 cup brown sugar
1 tablespoon flour
1 1/2 teaspoons cinnamon
Glaze:
1 cup powdered sugar
2 1/2 tablespoons milk
1/2 teaspoon vanilla
1/2 tsp cinnamon
Cinna-bun Cake Directions
- Preheat oven to 350°F. Prepare a 9″x9″ baking pan (buttered).
- Mix all of the “cake” ingredients together, except the butter. Add the melted butter last, and then transfer the batter to the buttered baking dish.
- Mix all of the topping ingredients together in a separate bowl. Drop by teaspoonfuls evenly over the cake batter base.
- Using a butter knife swirl the topping into the base. Bake for 24-28 minutes.
- While the cake is baking, prepare the glaze and set aside. Remove from oven and glaze the cake while still warm.
Air-Fryer Cinna-bun Cake
If you’d like to prepare this in your favorite air-fryer prepare it in a pan that fits your air fryer and cook at 320°F for 23-25 minutes. This is entirely dependent on your air-fryer model. We use 8×6 aluminum foil pans to make small meals for the freezer. They just happen to be perfect size for our air fryer too!
