WF Sugar Cookies Mix

Just because you can’t have wheat doesn’t mean you can’t enjoy delicious sugar cookies! Here’s a wonderful chewy sugar cookie mix recipe that can be made ahead of time and stored in the pantry until you’re ready to whip up a quick batch of cookies.
Combine the following in a bowl, blending well and then pour into a jar:

2/3 cup cornstarch
2/3 cup tapioca flour
1 1/2 cups potato starch flour
2 teaspoons baking powder
1/2 teaspoon salt

Seal the jar and attach a tag with the directions for completing the mix. (Makes 1 jar of Mix)

Attach a Tag:
In a Bowl, cream the following together:

1 1/2 cups sugar
1 cup shortening

Then add:
1 teaspoon vanilla
4 egg yolks

Carefully blend in the Cookie Mix. Roll out dough (dust table with GF flour first!) and cut cookies with your favorite cookie cutters. Sprinkle the tops generously with sugar. Bake at 375F for 8 minutes.
