Wheat-Free Cornbread Mix in a Jar

This make-ahead Wheat-Free, Gluten Free Cornbread mix is wonderful for a quick side dish or as a lovely gift basket or gift bag filler.

Combine the following in a bowl, blending well and then pour into a jar:

1 1/4 cups Gluten-Free Flour Mix
3/4 cup enriched cornmeal *
1/4 cup sugar
2 tsp. baking powder
1/2 teaspoon salt

Attach a Tag:
Combine the mix & the following liquids together, just until blended.

1 cup skim milk
1/4 cup vegetable oil
1 egg beaten (2 egg whites may be substituted)

Preheat oven to 400 degrees F. Spoon Mix into greased muffin tins or bake-able paper cups. Bake 20-25 minutes.
