Zucchini (or courgettes) is a summer squash that is usually harvested when it reaches 15 to 25cm. It can be enjoyed raw or cooked and contains an abundance of vitamins and minerals including Protein, Vitamin A, Thiamin, Niacin, Phosphorus, Copper, Vitamin C, Vitamin K, Riboflavin, Vitamin B6, Folate, Magnesium, Potassium and is an excellent source of dietary fiber.

It’s not necessary to peel the zucchini prior to adding it to your favorite recipe, but be sure to wash them thoroughly under clean running water to remove any dirt or residue, then pat dry.

When preparing savory dishes that require cooking remember that zucchini tolerates high heat very well. The trick to drawing out excess water (to prevent soupy dishes) is to cut the zucchini as the recipe dictates (sliced, quartered, etc), transfer into a colander and then salt it. Allow it to rest for 10 minutes, then roll the pieces onto paper towels or a lint-free cotton cloth to dry it.
Smaller zucchini is best for most recipes calling for slices or spears as the flesh is firm and browns nicely without becoming mushy. Larger courgettes are better suited for grating, grinding or shredding into cakes, relish, muffins, etc where the texture isn’t as important to the finished product.
