The trick to drawing out excess water (to prevent soupy dishes) is to cut the zucchini as the recipe dictates (sliced, quartered, etc), transfer into a colander and then salt it. Allow it to rest for 10 minutes, then roll the pieces onto paper towels or a lint-free cotton cloth to dry it.
