When preparing savory dishes that require cooking remember that zucchini tolerates high heat very well. The trick to drawing out excess water (to prevent soupy dishes) is to cut the zucchini as the recipe dictates (sliced, quartered, etc), transfer into a colander and then salt it. Allow it to rest for 10 minutes, then roll the pieces onto paper towels or a lint-free cotton cloth to dry it.
