This simple no-bake Strawberry Icebox Cake will melt in your mouth, literally. It contains luscious strawberries, vanilla cream, and a light drizzle of chocolate over the top; Oh, and if that wasn’t enough to get your taste buds buzzing, it only takes 15 minutes to prepare this delicious dessert!
Strawberry Icebox cake is also sometimes referred to as strawberry eclair cake. It’s a layered dessert consisting of graham crackers, vanilla cream, and fresh berries, often drizzled with melted chocolate.
How to Make No-Bake Strawberry Icebox Cake
In a 9″x9″ dish or pan, place a layer of graham crackers. You’ll likely want to snap the corners off to get them to fit snuggly. Spread half of the sliced strawberries evenly over the graham crackers.
Mix the pudding mix with the milk in a medium bowl until it thickens. Fold the stabilized whipped cream or cool whip topping into the pudding mixture.
Pour half of the pudding mixture over the strawberries. Next, repeat the layers by adding another layer of graham crackers, followed by the pudding mixture, then top generously with more berries.
If you’d like, you can drizzle chocolate over the top. In this photo, I melted 1/4 of a Hershey bar, poured it over the top, then drizzled it over the top.
Cover the dessert, then place it in the freezer or a cooler filled with ice. It should freeze through quickly.

2 c. of Cold Milk

2 cups of Whipped cream or 3/4 of a Tub of Cool Whip

UK Instructions/Tips
For our friends, Across the Pond, so to speak, here’s some clarification on the recipe.
Graham crackers could be described as graham flour biscuits or digestives. Here is a homemade recipe of them so you can see what they look like to get a better idea of what may work locally for you.
Vanilla Pudding Mix – This is a commercially prepared product that allows a person to make “instant” puddings by simply adding milk, and they do not require any stovetop preparation.
If you don’t have instant pudding mix, you could make a batch of fresh pudding from scratch, here is a make ahead mix that you can keep in your pantry.
However, instead of mixing it with cold milk as the instructions list above, you would need to prepare the pudding using the instructions on the mix recipe page and allow it to cool completely before creating the layers.
Also, you’ll need to double the prepared pudding amount as you’ll need 2 cups of pudding for the recipe above.
Let it cool, then fold in 2 cups of freshly whipped cream. The recipe takes a bit more work, but it is well worth it.
