Fresh, light and easy to throw together, this lemon blueberry dessert is sure to become a favorite in your house. We’ve provided two versions, original and our keto lemon blueberry dessert.
This dessert recipe calls for Mascarpone cheese. If you’re not familiar with it, it’s an Italian cream cheese that has an acidic component added to it, usually lemon juice or citric acid. It’s quite similar to cream cheese, but the base is whole cream rather than milk. If you don’t have Mascarpone cheese, you can substitute cream cheese in a pinch.
Blueberries and lemons compliment each other quite well.
Lemon Blueberry Dessert
You’ll Need
2 cups Lemon Curd
8 ounce Ricotta
8 ounce mascarpone
½ Lemon , juice only
½ cup Powdered Sugar
fresh blueberries
- In a bowl, combine ricotta, mascarpone, freshly squeezed lemon juice, and powdered sugar.
- Beat with an electric mixer until well combined and creamy.
- Spoon a layer of marscapone top with a layer of lemon curd, add another layer of marscapone.
- Top the dessert cups with fresh blueberries and sage leaves or grated fresh lemon zest.
Keto Lemon Blueberry Dessert
This particular dessert is very easy to “ketofy”. Simply use our delicious keto lemon curd recipe and use powdered swerve or bocha sweet in place of the sugar. The flavor is divine and you’ll never be able to tell the difference between the keto version and the non-keto version!
