Keto maple syrup is a rich, thick, buttery maple syrup blend that is less than 1 carb per serving. Not only is it wonderful on french toast, pancakes, and chaffles, it’s also amazing for use on maple glazed salmon, pork chops, and more.
This delicious syrup recipe takes just a few minutes to prepare. You’ll notice that this recipe uses BochaSweet, which is a non-insulin spiking natural sugar alternative.
Bochasweet is used in a 1:1 replacement ratio for sugar. Unlike other natural sweeteners, there is zero aftertaste, and zero cooling effect (often felt with Xylitol or Erythritol based sweeteners).
A note- the color of your finished syrup is entirely dependent on the brand of maple flavoring you choose to use. We use McCormick all natural maple extract, which is clear. This will cause your syrup to take on a more creamy buttermilk color, rather than a traditional syrup color.
If the color is important to you, use McCormick Imitation Maple Flavor, which will give the syrup a traditional maple syrup color.
Keto Maple Syrup
You’ll Need:
1/2 cup water
3/4 cup BochaSweet
2 tablespoons butter
2 teaspoons McCormick Imitation Maple Flavor
1/2 teaspoon pure vanilla extract
1/8 tsp xanthan gum or 1/4 tsp glucomannan
Combine water and BochaSweet in a small saucepan over medium heat.
Stir until the BochaSweet is completely dissolved, then bring it to a boil.
Simmer the mixture for one minute.
Add the butter and boil for one minute.
Using a whisk, vigorously mix in the xanthan gum (or glucomannan) to both thicken and prevent separation of the syrup.
Remove the syrup from the heat and add both the maple and vanilla extracts, mixing well to incorporate.

You’ll Need:

1/2 cup heavy whipping cream
2 tablespoons butter
2 teaspoons McCormick Imitation Maple Flavor
1/2 teaspoon pure vanilla extract
1/8 tsp xanthan gum
Combine water and BochaSweet in a small saucepan over medium heat.
Stir until the BochaSweet is completely dissolved, then bring it to a boil.
Stirring constantly, add the heavy whipping cream, then bring the mixture back to a boil.
Simmer the mixture for 1 minute.
Add the butter and boil for 1 minute.
Using a whisk, vigorously mix in the xanthan gum to both thicken and prevent separation of the syrup.
Remove the syrup from the heat and add both the maple and vanilla extracts, mixing well to incorporate.
