This Country Herb Chicken and dumplings is a traditional southern dish of true comfort food! This simple dish is perfect for using up leftover turkey or chicken and is ready in less than 20 minutes.
It’s very reminiscent of a savory chicken pot pie, but without the hassle of preparing a pie crust. Sometimes, on the weekend, we grill a beer can chicken so we have precooked chicken to use in various recipes during the busy work week. If you don’t have time (or are unable to grill), an inexpensive rotisserie chicken from your local grocery store works well too.
Country Herb Chicken and Dumplings
You’ll Need:
1 pkg of Country Herb Chicken Seasoning Mix
1/4 c. Butter
1 Medium Onion, Chopped
1/4 c. Flour
3 c. chicken Broth
1 1/3 cups milk (divided)
3 c. diced Cooked Chicken
2 c. Assorted Frozen Veggies (any kind you want)
1 c. of Homemade Bisquick-type mix
In a heavy saucepan or cast iron skillet over medium heat melt the butter, then add the onion and cook until it’s translucent.
Add the flour, stirring until it forms a ball (about 1 minute), then add broth, 1 cup of the milk and the seasoning packet, whisking well. Continue whisking over medium heat until the mixture is smooth and thick.
Add the chicken and frozen veggies, stirring often until they are heated through.
In a small bowl combine the remaining 1/3 cup of milk and the quick mix, mixing well. Drop by spoonfuls on top of the bubbling chicken/vegetable mixture. Cook uncovered about 4-5 minutes. Cover, shut off from heat and let sit 7 minutes without disturbing.

It has a little bit of everything that makes it feel like a full meal: carbs, meat, veggies, and grain. The prep time for this dish was also really low which made me happy since I didn’t have to spend hours in the kitchen preparing dinner tonight. This recipe might be my new favorite go-to when I want something comforting on cold days or on busy weeknights
