10-Minute Irish Eclair Bars

A fun twist on traditional eclairs, these delicious Irish eclair bars are perfect for any St Patrick’s day celebration gathering! Of course we have two delicious versions available, the fun Adults-only Boozy Irish eclair bars as well as the family-friendly non-alcoholic Irish eclair bars.

Alcoholic Version 10-Minute Irish Eclair Bars

You’ll Need:
2 1/2 Sleeves graham crackers, whole
1- 6 oz instant vanilla pudding mix or 2 (3oz) packages
1 c. Irish Cream Liqueur
1 1/2 c. Half & Half
1 (8 ounce) container whipped topping (cool whip), thawed
1 Batch Hot Fudge Sauce
3-5 Drops Green Food Coloring (Optional)

Line the bottom of a 9″x13″ baking dish with whole graham crackers.

In a medium-size mixing bowl combine half & half, Irish cream liqueur and pudding mixes beat mixture about 2 minutes until thickened.

Fold in Whipped Topping and add several drops of green food coloring until the desired color is reached.

Spoon half of the mixture over the graham crackers. Top with a layer of graham crackers, add the remaining mixture over the graham crackers, spreading it evenly. Top with another layer of graham crackers.

Pour the warm hot fudge topping over the top, smoothing evenly using the back of a spoon.

** Place the entire dish in the freezer for 20-30 minutes before serving.

If you’re using the hot fudge recipe in the link above, it will thicken to the perfect consistency. However, if you’re in a hurry, you can use prepared chocolate frosting in its place, you’ll need an entire tub. (About 1 1/2 cups).

    These are dangerously easy. Layers of pudding, graham crackers, and ganache = dessert heaven. Made ‘em once for work, now I get requests every month.
