Blue cheese dressing (also known as Bleu Cheese) is widely popular as a side sauce and salad dressing throughout the United States. It’s very simple to whip together in just a couple of minutes and offers tremendous flavor.
Blue cheese is made with cultures that have the mold Penicillium added, which is what gives the cheese it’s characteristic spotted or veined appearance. This specially cultivated bacteria is also what imparts the distinct flavor and scent. There are actually several different types of blue cheese, so for this recipe choose the one that you like best!
What do you eat with Blue Cheese?
You’re probably familiar with blue cheese salad dressing, which is lovely, but there are a lot of other ways to enjoy blue cheese too! Add a dollop to the top of a baked potato for a burst of flavor. In fact, use new potatoes to create appetizers for a dinner party!
Serve blue cheese dip with crisp, fresh vegetables such as celery sticks, carrot sticks, and bell pepper slices. For a slight twist, add a bit of freshly minced garlic to the dip as well.
To help counter the heat of buffalo hot wings, serve them with a generous helping of homemade blue cheese dressing. The sauce adds a burst of flavor while helping to tame the spice that tends to overwhelm the tastebuds.
As far as appetizers go, blue cheese pairs well with figs, pears, as well as dried fruits such as apricots or raisins. It’s quite tasty on whole-grain crackers as well.
Aside from the fact that blue cheese dressing & dip is delicious on a ton of different dishes, it’s also keto-friendly. Add a dollop of classic blue cheese dressing to your favorite grilled steak for a change of pace.
How to Make Blue Cheese Dressing & Dip
Gather your ingredients together, you’ll need mayonnaise, sour cream, fresh lemon, blue cheese crumbles, salt and pepper, and green onions.
In a medium bowl combine the sour cream and mayonnaise together. This is what makes up the super creamy delicious base of the dressing.
Add fresh lemon juice and a dash of salt and freshly ground black pepper.
Add the slivers of sliced green onions to the mixture. Depending on what I’m preparing the dressing/dip for I sometimes add a bit of minced garlic as well.
Then finally, add the blue cheese crumbles. Be sure to use blue cheese that you like, as there are a number of different types and flavors. For example, gorgonzola blue cheese is NOT my favorite, it smells like feet and tastes like old gym socks so I avoid that particular type!
Finally, just mix it all together! That’s really all there is to this recipe, I told you it was simple. Put it in the fridge for a couple of hours prior to serving to ensure that the flavors have time to mingle. This dressing recipe is rather thick, so if you prefer a slightly thinner version you can add 1/4 cup of half and half cream, mixing it in well.
