Shrimp are delicious on their own but add this rich herb butter drizzle and they become mouthwatering morsels that you’ll crave again and again! Roasted lemon herb shrimp are delicious as an appetizer or tossed onto a salad as the main dish.
This is one of our favorites to throw together for various events, potluck, tailgating, etc. We don’t worry about trying to keep the shrimp warm or spoilage because they’re the first to be gobbled down!
1 lb Raw Shrimp
1 pkg Italian Dressing Mix
1 stick butter
Preheat the oven to 375F
Cut the butter in pats and place them in the bottom of a 9″x13″ baking dish. Place it in the oven to allow the butter to melt.
In the meantime thinly slice the lemon. Once the butter is completely melted arrange the lemon slices in a single layer in the butter.
Spread the fresh raw shrimp over the lemon slices.
Liberally sprinkle the entire packet of Italian seasoning over the shrimp.
Bake for 8-12 minutes or until the shrimp are cooked throughout. Shrimp are translucent when raw and turn a bright pink/white when cooked through.
A good rule of thumb for cooking shrimp:
L- shaped = the shrimp are still too rare
O- shaped = the shrimp are overdone
C- shaped= the shrimp are perfect!
