Creamy Bacon Pea Salad
1 lb thick cut bacon, cooked and chopped finely
4 cups frozen sweet green peas, thawed
1/2 cup shredded mild cheddar cheese
1/2 medium red onion, diced finely
For the dressing:
1/2 cup sour cream
1/3 cup Mayonnaise
1 tbsp. granulated sugar
2 tsp. white vinegar
salt and pepper to taste
To prepare the dressing: whisk together all ingredients in a large serving bowl until smooth and combined.
Add chopped bacon, peas, cheddar cheese, and diced onions and stir to combine.
Chill in the fridge for 2-4 hours before serving to allow the flavors time to mingle. Just prior to serving sprinkle a few more bits of crispy bacon on top!
Use Cubed cheese, in place of shredded cheese
Protein: add 1 c. of cubed ham, or grilled chicken
Add 2-3 Hard-Boiled Eggs, diced or halved and placed on top of the salad
