Crunchy Cinnamon Maple Chickpeas – A Healthy Sweet Snack

How to Make Crunchy Cinnamon Maple Bits

Your family will never know that these crunchy cinnamon maple bits are actually good for them! We were trying to find a yummy snack that was low-carb, but crunchy and had a touch of sweetness.

Caramelized with a touch of real maple syrup and a hint of brown sugar, the real win is the high protein and fiber content. What sets these apart from other snack foods is that if the kids overindulge, this doesn’t really spoil their dinner.

You’ll Need:
3 cups prepared Chickpeas (aka Garbanzo Beans)
2 TBSP Coconut or Olive oil
2 TBSP maple syrup
2 TBSP brown sugar
1/2 tsp ground cinnamon

Preheat the oven to 375 degrees F.

Rinse and drain the chickpeas, remove any hulls that may be in them. (If you’re using canned chickpeas, you’ll need to use 2 cans).

Pat them dry with a paper towel, or if you happen to have a salad spinner, this works wonders for drying them super fast!

Spread the chickpeas in a single layer on a baking sheet lined with parchment paper.

Bake for 40 minutes, but stir them/roll them or shake the pan about every 12-15 minutes so they’ll cook evenly.

In order for this recipe to come out, they must be crunchy throughout the entire chickpea, so give them a taste. If they aren’t completely crunchy, put them back in the oven for a few minutes.

While they’re baking combine the remaining ingredients in a small bowl, mixing well.

Once the chickpeas are completely cooked and crunchy, add them to the cinnamon maple syrup mixture and toss until they’re evenly and completely coated.

Transfer them back onto the parchment paper lined baking sheet and place in the oven so the sugars can properly caramelize. About 6-8 minutes.

Variations & Substitutions

  • Different Sweeteners: Substitute honey or agave syrup for maple syrup.
  • Flavor Twists: Add a pinch of nutmeg, cardamom, or a dash of vanilla extract.
  • Spiced Version: Mix in a dash of cayenne pepper for a sweet-and-spicy kick.
  • Chocolate Lovers: Toss with a sprinkle of cocoa powder for a chocolatey twist.

Storage Instructions

  • Store in an airtight container at room temperature for up to one week.
  • For extra crispiness, store in a dry place to prevent them from becoming chewy.
  • If they soften, you can re-crisp them in a 300°F oven for 5-10 minutes.

Ingredients
  

  • 3 cups chickpeas (aka garbanzo beans (If using canned chickpeas, you’ll need 2 cans, rinsed and drained.))
  • 2 tbsp coconut or olive oil
  • 2 tbsp maple syrup
  • 2 tbsp brown sugar
  • ½ tsp ground cinnamon

  • Preheat the oven to 375°F.
  • Prepare the chickpeas by rinsing and draining them. If using canned chickpeas, remove any loose hulls. Pat them dry with a paper towel or use a salad spinner to remove excess moisture.

  • Bake the chickpeas by spreading them in a single layer on a parchment-lined baking sheet. Bake for 40 minutes, stirring or shaking the pan every 12-15 minutes to ensure even cooking.
  • Check for crispiness. The chickpeas should be crunchy all the way through. If they are still soft in the center, return them to the oven for a few more minutes.
  • Prepare the glaze by mixing the maple syrup, brown sugar, cinnamon, and oil in a small bowl.
    2 tbsp coconut or olive oil
    2 tbsp maple syrup
    2 tbsp brown sugar
    1/2 tsp ground cinnamon
  • Coat the chickpeas by tossing them in the maple syrup mixture until evenly coated.
  • Caramelize the coating by returning the chickpeas to the baking sheet and baking for an additional 6-8 minutes until the sugars have caramelized.
  • Cool and enjoy! Let them cool completely before serving—this allows them to crisp up even more.
