Almond Flour Cut-Out “Sugar” Cookies

We’ve been looking for delectable gluten free (very low sugar!) cookie to curb the sweet tooth in the evening, without destroying the days “clean eating” when we discovered these lovely little morsels. They’re Almond Flour “Sugar” Cookies . . . but.. without the sugar!almond-flour-cut-out-sugar-cookies

Generally speaking, we make our own Almond Milk. I prefer to use the remnant almond meal to make these cookies as they have a better texture than store bought almond flour (and of course, it cheaper to make your own!). In either case, you can use homemade almond meal or store-bought almond flour- both work fine for this recipe.

You’ll Need:
1/4 cup melted butter
1/4 cup honey
1 1/2 cups almond flour, firmly packed
1/2 teaspoon kosher salt
1 teaspoon vanilla extract

Preheat oven to 325.

Combine all the ingredients in a medium-size bowl, mixing well.

If you prefer cut out cookies, overturn the dough onto a silpat, top with another silpat (or parchment paper) and roll the dough out 1/4″ thick. Chill about 10-15 minutes in the freezer.

Use cookie cutters to cut whatever shapes you desire, transfer immediately to a baking sheet and
Bake at 325 for about 6-10 minutes, depending on the thickness of cookies.

These cook very quickly, so check them at 6 minutes!!

Let them cool completely before removing from cookie sheet.

If you just want the flavor of the cookie without the hassle of cutting them out you can scoop the dough by tablespoons full onto the cookie sheet and make drop cookies instead.
