Cheesy Baked Mustard Chicken is a simple throw together recipe that is loaded with flavor and is simple to prepare.
For this recipe we prefer to use boneless, skinless chicken breasts as they are frequently on sale in our area and we purchase larger quantities and freeze them until needed. However, if you’re using bone-in breast, you’ll need to adjust your cooking time accordingly. This delicious dish combines two types of cheese with a delicious blend of whole grain mustard and seasonings to complement the flavors.
You’ll Need:
4-6 boneless, skinless chicken breasts
1 1/2 cups sharp cheddar cheese, grated
3/4 cup whole milk
1/2 cup Parmesan cheese, grated
3 Tbs butter
2 Tbs all-purpose flour
1 1/2 Tbs whole grain mustard
1/2 tsp garlic powder

Preheat oven to 375º F.
Place the chicken breasts in a 9×13 baking dish and lightly season the each side with salt and pepper, set aside.
In a large saucepan, melt butter over medium heat and whisk in flour, stirring constantly, for about a minute or until smooth, paste-like, and golden in color. Whisk in whole milk until smooth. Bring to a boil, immediately reduce the heat and simmer for 5-7 minutes, stirring frequently until the mixture is thick and bubbly.
Add both types of cheese, mustard, garlic powder and then season with salt and pepper.
Pour sauce evenly over the top of the chicken. Bake for 25-30 minutes, or until chicken is cooked all the way through, but still tender.
Serve with a side salad, pasta salad, steamed veggie or baked potato for a simple, easy dinner.
