Sausage Scramble Casserole

You’ll Need:
1 1/2 pounds sausage
1 1/2 pounds raw potatoes, peeled and diced
8 eggs, lightly beaten
1 medium onion, diced
2 cups shredded cheddar cheese
1 cup milk or heavy cream
3 tablespoons olive oil
1 teaspoon garlic powder or 1 tsp minced garlic
3/4 teaspoon dried parsley
kosher salt and freshly ground pepper, to taste

To Kick it up a Notch & Add some Spice:

Optional: add 1/2 cup chopped pickled jalapeno pieces & 1 tsp Cayenne Pepper Seasoning

Preheat oven 350F

Spray a 9×13-inch baking dish with non-stick spray or butter it lightly.

In a large skillet, heat the olive oil over medium-high heat, add potatoes and saute until tender, about 10-15 minutes.

Carefully transfer the hot potatoes to the prepared baking dish and set aside

Add the sausage and onions to the skillet and cook until sausage is browned and onions are tender.

Season with garlic (powder or fresh), parsley, salt and pepper.

Drain any excess fat from pan and transfer the sausage mixture to the potatoes.

In a separate bowl, whisk together milk and eggs, and stir in cheddar cheese. Pour mixture over sausage & seasoned potatoes mixture and gently stir together.

Place baking dish in oven and bake for 20 minutes, or until eggs are cooked and everything is warmed throughout.

Remove from oven and serve hot.
