Popeyes Delight Breakfast

Lightly seasoned spinach is adorned with with eggs in this quickie breakfast dish that would leave a smile on even Popeye’s face!
As an excellent source of vitamins K, A, B2, B6, E as well as calcium, magnesium, iron and so many more, this breakfast dish featuring fresh spinach will really give you a great boost to start your day.

You’ll Need:
Fresh Spinach (about 8 oz)
2 eggs (per person)
1 tsp minced garlic
Salt and Pepper to taste
tsp of coconut oil

Add a drop of coconut oil to a skillet over medium heat, add the freshly minced garlic, saute a minute, add the fresh spinach leaves, stir for a moment.

Add the eggs and cover. Let them cook until the yolks have reached the desired hardness. We like ours runny, so about 2 minutes in all over medium heat on the bed of spinach.

Of course, if you happen to have some nitrate free bacon to chop up and add on top, that’s even better! Sprinkle very lightly with a dash of cayenne pepper just prior to serving.

  1. I’ve been making something similar. Eggs on the bottom seasoned with Mrs. Dash, spinach, cheese on top. I put a lid on top and turn the burner off.

    It’s done by the time my coffee is made.
