Strawberry Lime Poppyseed Vinaigrette

This delectable vinaigrette dressing offers the natural sweetness of fresh plump strawberries coupled with zesty limes and just a touch of honey in the perfect topping for a light summer salad.

Below we’ll share two recipes for this naturally sweetened dressing, it’s perfect on salads topped with slices of freshly grilled chicken, a handful of fresh berries halved and spinach greens.

Before making a dressing using extra virgin olive oil, be very aware of its smell and flavor on its own. We’ve tried several brands that are heavy and over-powering, which is why we opt to use a very light extra virgin olive oil. If the oil is not palatable to you plain, it WILL overpower your dressing.

Fresh limes impart the best flavor to this dressing, here’s the method we use to ensure extract every drop of juice and avoid waste.

You’ll Need:
¼ c strawberries (about 3-4 LG) cut in halves
¼ c lime juice (approx. 2 limes)
¼ c Extra Virgin olive oil
1 Tbs honey
salt & pepper, to taste
1 tsp poppy seeds

Combine the strawberries, lime juice, olive oil, honey, a dash of salt and pepper in a mason jar bullet, blend. Stir in the poppy seeds.

Whole30 Strawberry Lime Poppyseed Vinaigrette

In order to make this Whole30 friendly, you’ll need to omit the honey altogether, as sweeteners are not permitted. It doesn’t change the flavor a whole lot, you won’t miss it, just be sure to choose a nice fat date in its place!

You’ll Need:
¼ c strawberries (about 3-4 LG) cut in halves
¼ c lime juice (approx. 2 limes)
¼ c Extra Virgin olive oil
1/2 Medjool date, chopped
salt & pepper, to taste
1 t poppy seeds

Combine the strawberries, lime juice, olive oil, date, a dash of salt and pepper in a mason jar bullet, pulse for a second or so, until chopped/blended. Stir in the poppy seeds.
